Ingredients:

For the Dough:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 4 tbsp butter, softened
  • 1 egg
  • ¼ cup cold water

For the Filling:

  • 1 block of white cheese (queso fresco, queso blanco, or mozzarella), cut into 3-inch sticks

For Frying:

  • Vegetable oil

Instructions:

1. Make the Dough:

  1. In a bowl, mix flour, salt, and sugar.
  2. Add butter and work it into the flour until the mixture is crumbly.
  3. Add the egg and cold water, mixing until the dough comes together.
  4. Knead for 3-4 minutes until smooth. Cover with plastic wrap and let it rest for 20 minutes.

2. Prepare the Tequeños:

  1. Roll out the dough on a floured surface to about ⅛-inch thickness.
  2. Cut the dough into long strips about 1 inch wide.
  3. Wrap each strip tightly around a cheese stick, overlapping the edges to seal completely. Make sure no cheese is exposed to prevent leaks when frying.

3. Fry the Tequeños:

  1. Heat vegetable oil in a deep skillet or pot to 350°F (175°C).
  2. Fry the tequeños in batches until golden brown and crispy, about 3-4 minutes.
  3. Remove and drain on paper towels.

4. Serve:
Serve warm with a side of guava sauce, garlic aioli, or your favorite dipping sauce. These cheesy delights are a classic crowd-pleaser!

 

Tips:

  • For a sweeter twist, serve with dulce de leche or a honey drizzle.
  • You can freeze uncooked tequeños for later. Just fry them straight from the freezer for a quick appetizer!
