Ingredients:
For the Dough:
- 2 cups all-purpose flour
- 1 tsp salt
- 1 tsp sugar
- 4 tbsp butter, softened
- 1 egg
- ¼ cup cold water
For the Filling:
- 1 block of white cheese (queso fresco, queso blanco, or mozzarella), cut into 3-inch sticks
For Frying:
- Vegetable oil
Instructions:
1. Make the Dough:
- In a bowl, mix flour, salt, and sugar.
- Add butter and work it into the flour until the mixture is crumbly.
- Add the egg and cold water, mixing until the dough comes together.
- Knead for 3-4 minutes until smooth. Cover with plastic wrap and let it rest for 20 minutes.
2. Prepare the Tequeños:
- Roll out the dough on a floured surface to about ⅛-inch thickness.
- Cut the dough into long strips about 1 inch wide.
- Wrap each strip tightly around a cheese stick, overlapping the edges to seal completely. Make sure no cheese is exposed to prevent leaks when frying.
3. Fry the Tequeños:
- Heat vegetable oil in a deep skillet or pot to 350°F (175°C).
- Fry the tequeños in batches until golden brown and crispy, about 3-4 minutes.
- Remove and drain on paper towels.
4. Serve:
Serve warm with a side of guava sauce, garlic aioli, or your favorite dipping sauce. These cheesy delights are a classic crowd-pleaser!
Tips:
- For a sweeter twist, serve with dulce de leche or a honey drizzle.
- You can freeze uncooked tequeños for later. Just fry them straight from the freezer for a quick appetizer!
