Ingredients:

  • 4 green plantains (peeled and sliced into chunks)
  • 4 cups of water
  • 1 tsp of salt
  • 2 tbsp of butter or olive oil
  • 1/4 cup of cold water or milk (optional, for creaminess)
  • 1 red onion (sliced)
  • 2 tbsp of vinegar
  • 1 tbsp of oil (for onions)

Optional Toppings:

  • Fried Dominican salami
  • Fried cheese (queso frito)
  • Eggs (fried or scrambled)

Instructions:

 

1. Prepare the Plantains:

    • Peel the plantains and cut them into chunks.
    • Boil the plantains in a pot with water and salt until they are soft (about 15–20 minutes).

2. Mash the Plantains:

    • Drain the plantains, reserving about 1/2 cup of the cooking water.
    • Mash the plantains with butter or olive oil, gradually adding the reserved water or a splash of milk for a creamy texture. Mash until smooth. Cover to keep warm.

3. Prepare the Onions:

    • In a pan, heat the oil over medium heat. Add the sliced onions and sauté until they soften.
    • Add vinegar, stir, and let the onions caramelize slightly. Remove from heat.

4. Assemble:

    • Serve the mashed plantains (Mangú) on a plate. Top with the sautéed onions.
    • Pair with fried cheese, Dominican salami, and eggs for the full traditional experience.

Tips:

  • Add a drizzle of olive oil on top of the Mangú for extra flavor.
  • Serve immediately to enjoy the best taste and texture.
