Ingredients:
- 4 green plantains (peeled and sliced into chunks)
- 4 cups of water
- 1 tsp of salt
- 2 tbsp of butter or olive oil
- 1/4 cup of cold water or milk (optional, for creaminess)
- 1 red onion (sliced)
- 2 tbsp of vinegar
- 1 tbsp of oil (for onions)
Optional Toppings:
- Fried Dominican salami
- Fried cheese (queso frito)
- Eggs (fried or scrambled)
Instructions:
1. Prepare the Plantains:
- Peel the plantains and cut them into chunks.
- Boil the plantains in a pot with water and salt until they are soft (about 15–20 minutes).
2. Mash the Plantains:
- Drain the plantains, reserving about 1/2 cup of the cooking water.
- Mash the plantains with butter or olive oil, gradually adding the reserved water or a splash of milk for a creamy texture. Mash until smooth. Cover to keep warm.
3. Prepare the Onions:
- In a pan, heat the oil over medium heat. Add the sliced onions and sauté until they soften.
- Add vinegar, stir, and let the onions caramelize slightly. Remove from heat.
4. Assemble:
- Serve the mashed plantains (Mangú) on a plate. Top with the sautéed onions.
- Pair with fried cheese, Dominican salami, and eggs for the full traditional experience.
Tips:
- Add a drizzle of olive oil on top of the Mangú for extra flavor.
- Serve immediately to enjoy the best taste and texture.
