Ingredients:

  • 2 lbs beef stew meat, cut into bite-sized pieces
  • 1 lime, juiced
  • 2 tbsp vegetable oil
  • 1 medium onion, sliced
  • 1 medium bell pepper, sliced
  • 2 garlic cloves, minced
  • 2 medium tomatoes, diced
  • ½ cup tomato sauce
  • 1 tsp ground oregano
  • 1 tsp ground cumin

  • 1 tbsp vinegar
  • 1 tbsp soy sauce
  • 1 tsp Worcestershire sauce
  • 2 tbsp fresh cilantro, chopped
  • ½ cup beef stock or water
  • Salt and pepper to taste

Instructions:

1. Marinate the Beef:

  1. Rinse the beef with lime juice and water, then pat dry.
  2. Season with oregano, cumin, vinegar, soy sauce, Worcestershire sauce, salt, and pepper. Let it marinate for at least 30 minutes, or overnight for more flavor.

2. Sear the Beef:

  1. Heat vegetable oil in a large pot over medium-high heat.
  2. Add the beef and sear until browned on all sides. Remove the beef and set aside.

3. Sauté the Aromatics:

  1. In the same pot, add a little more oil if needed.
  2. Sauté the onion, bell pepper, and garlic until softened and fragrant.

4. Build the Stew:

  1. Add the tomatoes and tomato sauce to the pot. Cook for 2-3 minutes, stirring occasionally.
  2. Return the beef to the pot and mix well with the sauce.

5. Simmer:

  1. Add beef stock or water, just enough to partially cover the beef.
  2. Bring to a simmer, then lower the heat. Cover and cook for 1-1.5 hours, stirring occasionally, until the beef is tender and the sauce thickens.

6. Add Final Touches:

  1. Stir in fresh cilantro during the last 5 minutes of cooking. Adjust seasoning with salt and pepper if needed.

  • Serve over white rice with a side of beans, fried plantains, or a fresh salad for a traditional Dominican meal.
