Ingredients:

For the Fries:

  • 2 lbs fresh or frozen yuca (cassava), peeled and cut into thick sticks
  • Water (for boiling)
  • Salt to taste
  • Vegetable oil for frying

For the Garlic Mojo Sauce:

  • 3 garlic cloves, minced
  • 3 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tbsp chopped parsley or cilantro
  • Salt and pepper to taste

Instructions:

1. Prepare the Yuca:

  1. If using fresh yuca, peel and cut it into thick sticks, removing the woody core.
  2. Boil the yuca in salted water for 15-20 minutes until fork-tender. Drain and let cool.

2. Fry the Yuca:

  1. Heat vegetable oil in a skillet or deep fryer to 375°F (190°C).
  2. Fry the yuca sticks in batches until golden and crispy, about 3-4 minutes per batch.
  3. Remove and drain on paper towels. Sprinkle with salt.

3. Make the Garlic Mojo:

  1. In a small skillet, heat olive oil over low heat.
  2. Add minced garlic and sauté until golden and fragrant.
  3. Remove from heat and stir in lime juice, parsley or cilantro, salt, and pepper.

4. Serve:
Drizzle the garlic mojo sauce over the yuca fries or serve on the side for dipping.
