Ingredients:
For the Fries:
- 2 lbs fresh or frozen yuca (cassava), peeled and cut into thick sticks
- Water (for boiling)
- Salt to taste
- Vegetable oil for frying
For the Garlic Mojo Sauce:
- 3 garlic cloves, minced
- 3 tbsp olive oil
- 2 tbsp fresh lime juice
- 1 tbsp chopped parsley or cilantro
- Salt and pepper to taste
Instructions:
1. Prepare the Yuca:
- If using fresh yuca, peel and cut it into thick sticks, removing the woody core.
- Boil the yuca in salted water for 15-20 minutes until fork-tender. Drain and let cool.
2. Fry the Yuca:
- Heat vegetable oil in a skillet or deep fryer to 375°F (190°C).
- Fry the yuca sticks in batches until golden and crispy, about 3-4 minutes per batch.
- Remove and drain on paper towels. Sprinkle with salt.
3. Make the Garlic Mojo:
- In a small skillet, heat olive oil over low heat.
- Add minced garlic and sauté until golden and fragrant.
- Remove from heat and stir in lime juice, parsley or cilantro, salt, and pepper.
4. Serve:
Drizzle the garlic mojo sauce over the yuca fries or serve on the side for dipping.
